Pickling is mostly patience

Most of the work in a jar of pickles happens after we have stopped touching it.

Pickling is mostly patience

A jar of pickles takes about twenty minutes of our attention. The rest is waiting: a night in salt, a week in brine, four months in the dark.

We open one jar from each batch at the halfway point and taste it. If it is not ready it goes back in the cupboard and we try again in a fortnight.

Most things that go wrong in a pickle go wrong because someone could not wait.
