About this batch

Whole unwaxed lemons packed in coarse sea salt with bay and coriander seed, then left for six weeks to soften. The brine turns cloudy and the peel turns into something closer to a preserve.

Rinse a quarter, chop the peel and add it to a tagine, a dressing or a pan of white beans. The pulp is very salty, so use it sparingly.

Ingredients

Batch 11
